At the beginning of the nineteenth century, Sebastiano Gaffodio, a famous "quarryman" of the time requested permission to open a marble quarry on Monte Cervetto. He understood that the availability of the material was abundant and that large blocks of marble could be obtained. He therefore sent 6 samples to be analyzed and cataloged to Turin, the then capital of Italy, and on April 7, 1830, concessions were given for 5 types of marble, including the Grigio Moncervetto

In the 1900s, competition from the Apuan and Verona marbles caused a reduction in the production of gray Moncervetto, and many quarries were abandoned. Only in the 1940s was there a resumption of mining in the district of Mondovì, including the Grigio (Bigio) Moncervetto. Since 1983, the "Industria Marmi" company began to extract the Grigio Moncervetto from the quarry and send it to Verona where it was processed by the "Veneta Marmi" company. In 1975 the Moncervetto quarry became the property of the “Carbocalcio Cunese” which used it to produce calcium carbonate and by-products used in various sectors.

In 2020 CAVA MONCERVETTO was acquired by MARMI ITALIANI, the current owner. Particularly attentive to the dynamics of the markets and trends in architecture and design, the company immediately embarked on a path of excellence by placing itself as a preferential interlocutor for the supply of high quality marble with an intense aesthetic value.
